Cardiff's latest state-of-the-art development One Central Square has welcome the city's newest independent coffee shop and bistro, Milk & Sugar Central Square.

Run by Tim Corrigan, above, the man behind the Windsor Place coffee shop of the same name, it's a modern coffee shop in a development that is helping to change the face of the capital.

That's the good news.

The downside is that the coffee shop is run for the benefits of the tenants of One Central Square, so isn't open to Joe Public.

But while it may be out of bounds for most of us, it didn't stop us wanting to know more.

Here's what we found when we popped over the road from WalesOnline to take a quick look:

Who's behind Milk & Sugar Central Square?
Tim Corrigan of Milk & Sugar
Tim Corrigan, 46, from Roath, is the man behind the brand.

He's lived in Cardiff for 20 years and has been involved in the hospitality business for 30 years, having worked in London before helping to develop Mocka and Potted Pig in the city. He was also behind Soda Bar.

Is the Central Square shop like the one in Windsor Place?
The Windsor Place coffee shop has a different look but the food is similar. Tim says: "Central Square caters and suits the One Central Square development."

So instead of the leather sofas of Windsor Place, Central Square looks more business-like, with comfy red chairs and booths.

Why have a coffee shop that's not open to the public?
The coffee shop was always going to be for the tenants of the development.

Tim says: "The whole point of the coffee shop is to make it the heartbeat of the building. The coffee shop is a benefit to the people working in the building."

Tim adds he is delighted to be a part of One Central Square development. "To be part of this is incredible," he says. "It's a prestigious development.

"The vision for the place is down to the architects," he adds.

So, I won't be able to eat there?
As the coffee shop is exclusive to and for the benefit of the tenants, get to know someone who works there and have them invite you over for a breakfast or lunch meeting so you can see it for yourself and, more importantly, tuck into the food.

The food is similar to what's on offer at Windsor Place, using the same suppliers, with bread delivered daily and meat from butchers at Cardiff Market.

If I get in, what can I expect to see?
An 80-seater coffee shop and bistro offers a wide variety of dishes, including breakfasts, lunches, sandwiches and mains as well as premium teas and coffees. It will open weekdays, Monday to Friday.


Specials will change every two weeks to encourage repeat custom. "It's up to us to be constantly changing," says Tim.

You'll be offered dishes like these:

Roasted tomato and red pepper soup
Smoked mackerel and harissa butter with poached eggs
Peri Peri chicken thighs with steamed rice
Beef or mushroom strogonoff
Wild mushroom taglietelle


The set-up has business meetings in mind, so there are booths where you can plug in your laptop and mix business with pleasure.

Tim says we should 'watch this space' for further developments that WILL be open to the public. In the meantime, you can always pop along to Milk & Sugar Windsor Place which is open to all.
